We’re total suckers for a good breakfast. And though I’d probably eat biscuits and gravy every day, sometimes you need to mix it up with lighter fare.
One piece of bacon withstanding, this is a pretty healthy breakfast. Hard to argue when everything’s on top of a bed of greens.
Plus, the light lemon dressing ties the whole thing together, with just the right amount of brightness.

I could honestly eat this dish most mornings – and I usually do during salad season.
The key is the dressing. You’ll want to make it up in advance and let it sit for a few hours, allowing everything to meld together. It’s even better the next day.
It stores for a very long time in the fridge and then you’ll have it on-hand for quick breakfast salads.

Savory Breakfast Salad
This light, yet satisfying breakfast is the perfect way to start your day!
Ingredients
- Mixed greens
- 1 piece of crispy bacon
- 1-2 eggs
- Everything Bagel Seasoning
- Green onions
Salad Dressing
- 1/2 cup olive oil
- 1/4 cup lemon juice or white wine vinegar
- 2 tsp Dijon mustard
- 3 cloves garlic, minced
- 2 tbsp Everything Bagel Seasoning
- 1/2 tsp salt
- 1/4 black pepper
- Pinch of sugar
Instructions
- Fry up one piece of bacon per salad, set aside
- Plate your serving of salad greens and mix with dressing
- Fry up one to two over-easy eggs per salad
- Top with eggs, crumbled bacon, green onions, and more Everything Bagel Seasoning
