The Secret to Ooey-Gooey Cookies

The key to soft cookies is all in the butter. It’s super important that you use COOL room temperature butter. If the butter’s too soft – melting on a hot day or in a hot kitchen – the cookies will spread and you won’t like the results.
It’s also important to bake the cookies until just barely set. If they’re firm in the oven, they’ll be rock-hard once cooled.
How to Keep Cookies Fresh

I think we can all agree that cookies straight from the oven are the best, but sometimes you need to store baked cookies for a few days. These cookies will store well in an airtight container for about 5 days. However, there is a way you can prolong their freshness.
A day or two after baking – when the texture starts to change & harden – put a piece of bread or tortilla in with your cookies. The moisture from the bread will transfer to the cookies and keep them chewy for longer.
As an alternative, this dough stores perfectly in the freezer for warm cookies on demand. We usually only bake a dozen or so and freeze the rest for fresh cookies right out the oven.

The Best Chocolate Chip Cookies
Ingredients
- 1/2 cup softened butter
- 1/2 cup white sugar
- 1/2 cup light brown sugar, packed
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/4 cup chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Using a hand or stand mixer, whip the butter and sugar together until fluffy - about 1-2 minutes.
- Add in the egg & vanilla. Beat until smooth.
- Mix in the baking soda, salt, and flours until just combined.
- Fold in the chocolate chips & briefly knead the dough to ensure all the floury bits at the bottom are mixed well.
- Using a cookie scoop, form one-inch sized dough balls. Bake on a parchment or silicone-lined cookie sheet for 9-10 minutes, or until golden brown.
- Let the cookies cool on the sheet for a few minutes before transferring to a cooling rack
Notes
To Freeze the Dough: Slightly flatten out your dough balls so they form more of a disk. Instead of baking, put your lined cookie sheet with cookie dough balls in the freezer. Freeze for a few hours, or until set, before transferring to an airtight container.
To Bake from Frozen: Same instructions apply - 350 degrees Fahrenheit for 9-10 minutes
