So we’re always trying new ways to spice up our breakfast!
Fresh Herbs are Everything
This is the top tip I can give you when it comes to food in general.
Fresh herbs are the single best way you can improve your cooking. They quickly add a punch of flavor that you can’t get anywhere else.
That’s why we love our herb garden!
And that’s also why these three recipes feature fresh herbs.
I hate to be a stickler here but subbing dried really won’t give you good results.
So either pick some fresh from the garden or head to the store for the good stuff!
Alright, let’s get down to it…
Here are our three favorite way to use herbs for adding flavor to our morning eggs.
Eggs, Goat Cheese, & Thyme

This one is definitely top of my list!
Delicious with both scrambled & over-easy eggs.
Honestly, I’m not much of a measurer for these dishes, but…
For two eggs, top with roughly 1 teaspoon minced thyme and 1 teaspoon crumbled goat cheese.
Both flavors pair really well with eggs and the cheese gives it a nice zing.
Every Jerry, a proclaimed hater of goat cheese, loves this dish!
Eggs, Lemon Zest, & Parsley

These eggs have a lovely, bright flavor. Most people don’t think of having lemon with eggs, but it totally goes.
This combo is also delicious on both scramble & over-easy eggs.
For two eggs, top with roughly 1 teaspoon of chopped parsley & the zest of a quarter of a lemon.
Eggs, Capers, Tomatoes, & Oregano

This flavor combo is inspired by another breakfast we love called Eggs in Purgatory. It’s a baked dished with eggs & cheese over marinara.
But some days you just don’t have the time to bake things & make a homemade red sauce.
For a pared-down version, try this combo for two eggs: 1/2 teaspoon capers, 1 teaspoon fresh oregano, 3 diced grape tomatoes.

Three Easy Herbed Egg Recipes
Simple ways to add flavor to your morning eggs. All of these are rough measurements. Always spice from the heart...
Ingredients
Eggs, Goat Cheese, & Thyme
- 2 eggs
- 1 teaspoon thyme, minced
- 1 teaspoon goat cheese, crumbled
Eggs, Lemon Zest, & Parsley
- 2 eggs
- 1 tsp parsley, chopped
- Zest of a quarter of a lemon
